Masala Chai Recipe
- 3 cups water
- 2 cinnamon sticks
- 15 cardamom pods
- 15 whole cloves
- 1 Tbsp. chopped fresh ginger
- 1 cup milk
- 3 Tbsp. sugar
- 4 tsp. black tea leaves (or 4 tea bags)
In a medium saucepan, bring the water, cinnamon, cardamom, cloves and ginger to a boil over medium-high heat. Turn off heat, add tea, and cover the saucepan. Let stand for 3 minutes to steep the tea. Strain the tea-and-spice mixture into another saucepan. Add milk and sugar and bring to a gentle boil over medium-high heat. As soon as the tea begins to boil, remove from heat and stir into cups. Serve immediately. Serves 4.
[We often double the recipe to serve the whole family. You can also substitute ground spices for the cinnamon, cloves, cardamom and ginger. For creamier chai, use only milk instead of water.]
